2 eggs
1/2 large Zucchinj
1 tbsp Pesto (mine is homemade)
1 Tomato
Extra Virgin Olive Oil
Salt
Black Pepper
Chilli Flakes
fresh Coriander
Turn zucchinis into noodles (if you don't have the machine you could grate into chunks)
To a hot pan, add olive oil then cook the zucchini for a couple of minutes until the water is evaporated.
Form little circles, add 1/2 tbsp of Pesto into each circle then crack the eggs and cover the pan.
Let it cook for 5-10 mins until you get the desired texture of the yolk.
Season with salt, black pepper, chili flakes and coriander.
Serve with tomato and drizzle some olive oil.
