5 cups Watermelon, diced

sparkle

5 Cucumbers, sliced

sparkle

1 1/2 cups Halloum, diced

sparkle

2 tbsp Fresh Mint, finely chopped

sparkle

3 tbsp Extra Virgin Olive Oil

sparkle

1 Lime, juiced

sparkle

3 tsp Honey

Watermelon Halloum Salad

INSTRUCTIONS

Chop the watermelon, cucumber and halloum and add to a big bowl.

Chop the mint thinly and add to the bowl.

sparkle

In a smaller bowl, whisk the lime juice, honey and olive oil. Pour over the salad.

Enjoy right away or store in the fridge for up to 3 days.
