85g Desiccated Coconut
120g frozen Strawberries
2 tbsp Liquid Sweetener
1 tsp Vanilla Extract
150g Dark Chocolate
Place strawberries, coconut, honey and vanilla extract in a food processor. Blend until smooth.
Pour the mix into a cake pan lined with baking paper and flatten it evenly.
Freeze for 1 or 2 hours until it becomes solid.
Melt the chocolate in a double boiler.
Cut the strawberry and coconut mixture into even bar pieces.
Dip each piece in the chocolate and let it set. Repeat the process for each bar.
Store them in the fridge or freezer and enjoy!
