1/4 Red Cabbage
1 Red Bell Pepper
1 large Cucumber
1 large Carrot
Vermicelli Rice
1/2 cup Peanut Butter
4 tbsp Coconut Aminos or Soy Sauce
1 tbsp Sesame Oil
1 tbsp Rice Vinegar
1 tbsp Sriracha
1/2 tbsp fresh Ginger, grated
1/2 fresh Garlic, grated
2 tbsp Water
Mint
Sesame Seeds
Chop your veggies thinly.
Add the vermicelli rice to a bowl and cover with hot water for 5 mins. Drain once cooked.
In a jar, add the sauce ingredients and shake well.
To a large bowl, add vermicelli rice, veggies and peanut sauce, mix well.
Top with chopped mint and sesame seeds.
