1 1/2 cup Spelt Flour
Large Handful Spinach
1 Egg (can sub flax egg)
Splash of Lemon or Water
Preheat the oven at 180C.
Blend spinach, egg, salt, water or lemon until smooth.
Pour the mixture in a bowl and sift in the flour. Mix well.
Brush olive oil baking paper. Pour mixture. Place another greased baking paper on top to roll the dough and flatten evenly.
Cut into squares and with a toothpick, poke whole in the center of each square.
Bake 20 mins until crisped (some bits will need more time so take out the crispy ones and let the others a bit more if desired)
Let cool and enjoy with your favorite dips!
