1 kg Baby Potatoes
2 tsp Rosemary
1 tsp Mint
1 tsp Paprika
1 tsp Turmeric
handful of Parsley (or Coriander)
Extra Virgin Olive Oil
Salt
Black Pepper
Preheat oven 200C.
Boil potatoes in salted water for 15-20 mins or until a knife goes through easily.
Drain and rinse.
Place baking sheet on a pan, pour the potatoes. With a flat surface glass, smash them. If they take too much space on one pan, divide into two pans.
Drizzle olive oil, salt and black pepper.
Mix well so all potatoes are coated.
Bake for 30-35 mins until crispy and golden.
Transfer potatoes to a bowl and add all the remaining spices with 1 tbsp of olive oil.
Mix well to incorporate everything and enjoy!
PS: how I usually do it is mix the spices with olive oil in a small bowl and then drizzle over the potatoes, both work but i prefer this method as spices are better mixed through.
