1/2 Red Cabbage
1/2 Garlic Clove
1 tbsp Avocado Oil
1/2 cup Balsamic Vinegar
1 tsp Salt & Pepper
Optional to serve with: Quinoa and sautéed Zucchini
Preheat the oven 220C.
Slice cabbage into thick steak-like pieces.
Brush with olive oil, salt and pepper.
Thinly slice garlic and sprinkle over the cabbage.
Bake for 20-25 mins.
In the meantime, add the balsamic vinegar to a pot and bring it to a light simmer.
The quantity will reduce and the texture will turn into a glaze - remove from heat.
Once cabbage is ready, drizzle over the balsamic glaze and optionally serve with quinoa and sautéed zucchini.
