3/4 cup Red Lentils (150g)
1 1/2 cup Water
1 tsp Salt
1/2 tsp Black Pepper
Handful of Spinach
Optional toppings: roasted sweet potatoes, edamame, red bell pepper, avocado, broccoli sprouts, evoo)
Soak the red lentils for at least 1 hour. Drain and rinse well.
To a blender, add red lentils, water, salt and pepper, blend until smooth.
Add spinach and blend. If too thick, add more water.
On a hot pan, brush some olive oil and pour one ladle of the mixture.
Flatten the mixture and let it cook for a couple of minutes on one side, flip and cook on the other side for a couple of minutes.
Repeat the process until the batter is done.
Let the crepes cool and enjoy filling it with your favorite veggies!
