1 15oz can Coconut Milk
1 1/2 cup of Water
1 tbsp Curry Powder
2 tsp Turmeric
1 tsp Cumin
1 tsp Ginger
Salt and Pepper to taste
2 cups Red Lentil
Bring water to boil and add lentils and coconut milk.
Return mixture to a boil then reduce to simmer. Cook for 10 mins until the lentils have softened.
Stir in spices, then cook for another 5 mins.
Pairs nicely with a bed of greens, flatbread or rice.
