1 cup Pumpkin Seeds
1 ½ cups Water
½ tsp Himalayan Salt
½ tsp Thyme
½ tsp Sumac
½ tsp Turmeric
½ tsp Black Pepper
1 sprig Fresh Rosemary
Extra Virgin Olive Oil
Sourdough Bread
Toppings: Fresh Coriander, Zaatar, Sumac, Salt, Black Pepper, Extra Virgin Olive Oil.
Soak pumpkin seeds in hot water for 2 hours. Drain and rinse well.
To a high speed blender, add pumpkin seeds, spices and water, blend until combined.
To a hot pan, add olive oil then pour the mixture.
Stir occasionally until consistency resembles scrambled eggs.
Toast your sourdough slice, add the pumpkin seed scramble and top with fresh coriander, zaatar, sumac, salt, black pepper and olive oil.
