300g fresh Ginger
1/2 cup Rice Vinegar
1/2 cup Boiling Hot Water
1/4 cup Maple Syrup
1 tsp Salt
1/2 cup Boiling Hot Water
1/4 cup Maple Syrup
1 tsp Salt
Peel the skin off using a spoon.
Slice the fresh ginger very thinly either using a grater or mandolin or sharp knife.
In a big jar, add rice vinegar, hot water, maple syrup and salt. Shake well.
Add the sliced ginger. in the jar and submerge everything under the liquid.
Let it rest at room temperature for 1 hour.
Refrigerate for at least 4 hours.
Store in the fridge for up to 2 months.
