2 medium Eggplants
1 ยฝ tbsp White Miso Paste
2 tbsp Rice Vinegar
1 ยฝ tbsp Maple Syrup
1 tsp Sesame Oil
Toppings: Sesame Seeds, Coriander, Chili Flakes (can also add green onions and pomegranate seeds)
Preheat the oven at 220C. Cut the eggplants in a criss cross.
Place the eggplants flesh side down and bake for 30 mins.
In the meantime, whisk the sauce ingredients in a bowl.
Flip eggplants over and generously brush the sauce over. Place back in the oven for 5 mins.
Let it cool slightly and add your toppings of choice.
