150g Cashew Nuts (2/3 cup)

80g Pistachios (1/4 cup)

200g Dates, pitted & soaked (3/4 cup)

sparkle

40g Desiccated Coconut (1/3 cup)

sparkle

6g Matcha Powder (1 1/2 tsp)

sparkle

40ml Coconut Oil, melted (2tbsp + 2tsp)

sparkle

Toppings: Matcha powder, Chopped pistachio

Matcha Power Balls

INSTRUCTIONS

Store in an airtight container, in the fridge 10 - 14 days or in the freezer 1+ months.

Pit the dates and soak in hot water for 10 mins and strain. *If the dates are very dry, soak them for 20 minutes.

In the meantime, add the cashews and pistachios into a food processor and mix until broken down into a fine powder, 30 - 60 seconds.

Add the dates, coconut and matcha powder. Process until well mixed.

Add the coconut oil and process again. The mixture should become sticky and easy to roll into balls.

Shape the mixture into small size balls and place on a baking sheet lined with parchment paper.

Sieve matcha powder if you like over the balls sprinkle chopped pistachio on the top and press in slightly so they stick.

Place the balls in the fridge 1+ hours to set.
