2 Eggs
1 tsp Vanilla Extract
1/4 cup Extra Virgin Olive Oil
1/4 cup Lemon Juice
1/4 cup Maple Syrup
2 cups Almond Flour
1/4 tsp Baking Soda
Chia Seeds, to top
Preheat the oven to 180C.
In a bowl, crack eggs and vanilla extract, whisk well.
Pour in olive oil, lemon juice and maple syrup. Whisk well.
Sift in the almond flour, add lemon zest and fold the mixture until well combined.
Add the baking soda and incorporate well.
Pour in a cake pan with baking paper. Evenly distribute the mixture and top with chia seeds.
Bake for 35 mins until the top has browned and a toothpick comes out clean.
Let it cool before cutting into it and enjoy!
