1 1/2 cup Shredded Coconut
1/4 cup Almond Flour
2 tbsp Coconut Oil
1/4 cup Maple Syrup
1 Lemon, juice and zest
1 tsp Vanilla Extract
Preheat the oven at 180C.
Add all the ingredients to a food processor and mix until well combined.
Using an ice cream scooper or spoon, scoop a bit of the mixture, pat down with your fingers and place on a baking tray.
Repeat the process until the mixture is finished.
Bake for 12 mins.
Let it cool and enjoy! Store in an airtight container.
