Sauce: 90g Kale, stems removed, roughly chopped.

1 can Butter Beans

1/4 cup Extra Virgin Olive Oil (EVOO)

sparkle

1 Lemon, juiced + zest to garnish

sparkle

1/2 cup Pasta Water, or more if needed

sparkle

Gnocchi: 500g Gnocchi

sparkle

1/2 tbsp EVOO

sparkle

3 Garlic Cloves, minced

sparkle

Garnish: Flakey sea salt, black pepper, chili flakes, lemon zest, EVOO

Kale &  White Bean Gnocchi

INSTRUCTIONS

Cook gnocchi in boiling salted water for 2 mins. Save a mug of pasta water.

Combine all the sauce ingredients to a high powered blender until smooth. Add water if needed.

In a hot pan, add 1/2 tbsp EVOO and minced garlic, sautรฉ for 1 min on medium heat. Add cooked gnocchi and stir in for 30 sec.

Add sauce and reduce heat. If needed, add liquid to thin out the sauce.

Serve in a plate and garnish with flakey sea salt, black pepper, chilli flakes, lemon zest, EVOO.
