1/4 Beetroot, cooked
1/4 tsp Cayenne Pepper
1 tbsp Olive Oil
1/2 Avocado
1/2 tsp Sumac
1/2 Mango
1/2 Red Onion
Handful of fresh Coriander
1 Lime
Sesame Seeds
Salt & Black Pepper
Dice beetroot and mix cayenne pepper, salt, black pepper. Drizzle the olive oil.
Mash avocado and mix in sumac, salt and pepper. Squeeze half the lime.
Dice mango and mix in red onion, coriander and lime.
Assemble on a plate, the beetroot layer, avocado layer and then mango salsa. Top with sesame seeds.
Pairs perfectly with canned mackerel or tuna for extra protein!
