1 1/2 cup Edamame, frozen
3 Cucumbers
2 tbsp Tamari Soy Sauce
2 tbsp Rice Vinegar
2 tsp Maple Syrup
1/2 tsp Sesame Oil
1 tsp Sesame Seeds
1 tbsp of Coriander
1 Nori Seaweed Sheet
In a bowl, mix tamari, rice vinegar, maple syrup and sesame oil.
Steam edamame beans for a couple of minutes and let them cool.
Slice cucumbers in half moon.
Assemble in a bowl and top with coriander and sesame seeds.
Cut nori sheet in little squares and use it as a base for your bites (highly recommended)
PS: I would have added an inch of ginger in the dressing for an extra kick
