1/2 White Cabbage
2 Eggs
1 tbsp Parsley
1 tbsp Spring Onion
1 Garlic Clove
3 tbsp Oat Flour
1 Lemon and itβs Zest
1/4 cup Coconut Oil, for frying
Salt & Pepper
Chop Cabbage finely.
In a bowl, whisk eggs, add parsley, spring onion, lemon zest, salt and pepper. Grate garlic. Whisk well.
Add the oat flour, whisk until well incorporated and there are no clumps.
Add the cabbage, mix well to coat them equally.
Prepare a paper towel on a plate next to you.
In a pan, on medium high heat, pour in the coconut oil. Wait for 2 minutes. Place a couple of spoonfuls.
Flip them when golden brown under. Cook for 6-7 mins on the other side. Fry by batches.
Once off the heat, drizzle lemon juice. Serve with sauce of choice, i used my sweet and sour tahini.
