1 small White Cabbage

4-5 small Cucumbers

sparkle

1/2 cup Green Onions

1 Avocado

sparkle

Large Handful of Parsley

sparkle

1 Lemon

sparkle

1/4 cup Cashews

sparkle

1 tbsp Nutritional Yeast (optional)

sparkle

2 tbsp Water to thin, more or less

sparkle

Salt to taste

Cabbage Crunch

INSTRUCTIONS

To a high power blender, add avocado, parsley, lemon, cashews, nutritional yeast, salt and water. Blend until smooth and adjust texture and taste according to you.

Cut the cabbage vertically and horizontally to have small bite sized bits.

Slice cucumbers and green onions.

To a big bowl, add the cabbage, cucumber and green onions. Pour the sauce over and mix until well incorporated.

Use a cabbage leaf, fill up with the mixture and enjoy the crunch!
