1 medium Sweet Potato
Stuffing of choice: 1 Avocado, mashed
1 Tomato, chopped
1/2 Lemon, juiced
200g cooked Chickpeas, drain and rinsed
Spices: cumin, paprika, turmeric, salt & pepper
Extra Virgin Olive Oil
Fresh parsley
Wash your sweet potato really well, pat dry and poke a couple of times with fork
Bake at 200C for 1 hour, insert a knife to check itβs done, it should go through easily
In the meantime, make your crispy chickpeas with olive oil and spices. You can either do them by baking them in the oven or on a pan.
Mash avocado and mix with chopped tomatoes and lemon
When the sweet potato is cooked, open it lengthways and fill with the stuffing. You can get creative with your own stuffing too!
